dee Harvesting: On the small side

Did not get a huge crop of these, then again i wasnt expecting too… My experiment worked and i got enough for two meals..I assumed these were earlies as they flowered before my other potatoes – the foliage was starting to die down,so i tipped them out of their grow sack and was pleasantly surprised to get the amount i did even though they were on the small side, about the size of a brussel sprout.. Anyway – this is what i cooked with them last night…

  • Warm Chicken & Potato Salad
  • Ingredients
  • 500g new / salad potatoes, cut into ½ cm slices
  • 1 tbsp balsamic vinegar
  • 3 tbsp extra virgin olive oil
  • 100g baby spinach
  • 4 cooked chicken breasts, sliced 400g
  • 100g cherry tomatoes, halved

Method Place the potatoes in a pan, cover with water and bring to the boil. Cook for 4-5 minutes. Drain, and toss in 2 tbsp oil. Fry potatoes in a frying pan for 6-7 minutes until soft and golden

Add the vinegar, remaining oil and spinach and cook for a few moments until slightly wilted. Stir in the chicken and tomatoes then serve.
