Rumex scutatus

This sorrel was started from seed, transplanted into the garden in the second half of April, and was ready for harvest in June. I didn’t expect the plants to get so big— I have way too much sorrel now.

So far I have found two uses for it, which are as a sauce on fish, and cream of sorrel soup. I think I will try making a sorrel quiche or tart. Salad is another suggested use, but the acidity is particularly noticeable in the raw leaves.

As of Spring 2008, these are 1-year old plants.
