Also called "The Bull's Eye Beet" this Italian treasure has a sweeter, more mellow flavor than ordinary beets and a striking, bicolor interior marked with rings of red and cream. The bright-green tops are also mild. These beets retain their flavor and texture well for an extended harvest.

Sowing depth: 1/2 to 1 inch
Seed spacing: 3 inches
Row spacing: 10-18 inches
Days to harvest: 55
Sow seeds outdoors in a sunny location with well-drained soil. Sow in early spring when temperatures have become moderate, or sow in late summer for a fall harvest. Beets may also be harvested in winter in mild regions.
Thin seedlings to 4 inches apart when they are 3 inches tall. Thereafter, thin as necessary if seedlings become crowded. Use the thinnings for salads or greens.
Pointers: Harvest beets at 1 to 3 inches long for best flavor. When boiling beets, leave 1 inch of greens at the top of the beet and boil the fruits whole.
